Tatsoi

Everything you need to know about growing, harvesting and enjoying Tatsoi microgreens at home.

Mild · Fresh · Gently Mustardy

Tatsoi microgreens are tender and fresh with a gentle brassica flavour and a subtle mustard-like finish. Their delicate green leaves have enough character to add interest to a dish while remaining mild enough for everyday use.

Fresh and versatile, Tatsoi works beautifully as a finishing green for salads, bowls, eggs and Asian-inspired dishes.

Flavour

Mild · Fresh · Gently mustard-like

Tatsoi has a clean, slightly earthy flavour with subtle mustard notes. It is gentler than stronger mustard and radish varieties, making it easy to pair with a wide range of foods.

Growing Level

Easy

Tatsoi is a beginner-friendly microgreen that grows reliably with consistent moisture, good airflow and adequate light.

Growing Time

Approximately 8–12 days

Growing conditions such as temperature, light, airflow and watering can influence development. Use the appearance and tenderness of your microgreens as your main guide when deciding when to harvest.

Soaking

No soaking required.

Tatsoi seeds can be sown directly onto a thoroughly moistened growing mat.

Germination

After sowing, keep the seeds covered and in darkness during the initial germination period.

Once the seeds have germinated and the young shoots are established, uncover the tray and move it into light.

Watering

Keep the growing mat consistently moist without allowing it to become waterlogged.

Once the roots are established, bottom watering is preferable. Add water to the reservoir tray below and allow the growing mat to absorb moisture from underneath.

Good airflow and balanced moisture help encourage healthy, even growth.

Light

Once uncovered, place your Tatsoi microgreens in a bright location with good indirect natural light or beneath a suitable grow light.

Adequate light encourages compact growth and helps the leaves develop their fresh green colour.

When to Harvest

Tatsoi microgreens are generally ready when the stems are well developed and the cotyledons are fully open and green.

Harvest just above the growing mat using clean scissors or a clean, sharp blade.

Best With

Eggs · Salads · Bowls · Sandwiches · Fish · Noodles · Rice dishes · Asian-inspired dishes

Its gentle flavour makes Tatsoi particularly versatile, while its subtle mustard character adds a little more interest than very mild greens.

Storage

For the best quality, harvest only what you need whenever possible.

If storing harvested microgreens, make sure they are dry before placing them in a clean container in the refrigerator. Excess moisture can shorten their freshness.

Wash before eating and enjoy while fresh.

Good to Know

Tatsoi is an Asian leafy green belonging to the Brassica family and is closely related to pak choi and other mustard greens.

As a microgreen, its flavour is delicate and fresh, with only a gentle hint of the mustard character found in the mature plant.

Why Grow Tatsoi?

Tatsoi is a beautiful middle ground between mild and peppery microgreens. Delicate enough for everyday meals yet distinctive enough to bring something extra, it is an easy variety to keep reaching for.

Grow it. Cut it fresh. Add gentle flavour.
