Speckled Pea

Everything you need to know about growing, harvesting and enjoying Speckled Pea microgreens at home.

Sweet · Crisp · Fresh

Speckled Pea microgreens are crisp, tender and naturally sweet, with the familiar fresh flavour of young peas. Their larger leaves, delicate tendrils and juicy stems give them a completely different character from smaller microgreen varieties.

Fresh and satisfying, they work beautifully both as a finishing green and as a more generous ingredient in everyday meals.

Flavour

Sweet · Fresh · Pea-like

Speckled Pea has a naturally sweet, clean flavour reminiscent of fresh garden peas. The shoots are crisp and succulent, with a gentle flavour that pairs easily with both light and savoury dishes.

Growing Level

Easy

Speckled Pea is a reliable variety and a good choice for beginners. Because the seeds are larger than most microgreen seeds, they require a slightly different preparation before sowing.

Growing Time

Approximately 10–14 days

Growing conditions such as temperature, light, airflow and watering can influence development. Harvest according to the size, tenderness and appearance of the shoots rather than relying only on the number of days.

Soaking

Soaking recommended.

Soak the seeds in fresh drinking water for approximately 8–12 hours before sowing.

Drain thoroughly before spreading them evenly over the prepared growing mat.

Germination

After sowing, keep the seeds covered and in darkness during the initial germination period.

Pea seeds benefit from gentle pressure during germination, helping the roots establish themselves securely in the growing medium.

Once the shoots are established and beginning to lift, uncover the tray and move it into light.

Watering

Keep the growing mat consistently moist without allowing it to become waterlogged.

Once the roots are established, bottom watering is preferable. Add water to the reservoir tray below and allow the growing mat to absorb moisture from underneath.

Because pea shoots develop a substantial root system, check moisture regularly as they grow.

Light

Once uncovered, place your Speckled Pea microgreens in a bright location with good indirect natural light or beneath a suitable grow light.

Adequate light encourages strong stems, healthy green leaves and the development of their characteristic tendrils.

When to Harvest

Speckled Pea shoots are generally ready when they have developed strong stems, fresh green leaves and tender young tendrils.

Harvest above the growing mat using clean scissors or a clean, sharp blade.

For the best eating quality, harvest while the shoots are still young and tender.

Best With

Salads · Sandwiches · Wraps · Bowls · Eggs · Avocado · Fish · Stir-fries

Their crisp texture and naturally sweet flavour also make pea shoots lovely simply eaten fresh.

Storage

For the best quality, harvest only what you need whenever possible.

If storing harvested pea shoots, make sure they are dry before placing them in a clean container in the refrigerator. Excess moisture can shorten their freshness.

Wash before eating and enjoy while fresh.

Good to Know

Unlike many smaller microgreen varieties, Speckled Pea benefits from soaking before sowing because of its larger seed size.

Pea shoots also grow larger and develop more substantial stems and leaves, giving them a crisp texture and making them particularly satisfying to eat.

Why Grow Speckled Pea?

Speckled Pea brings something different to the growing tray — larger shoots, delicate tendrils, a satisfying crunch and a naturally sweet flavour.

Easy to enjoy and wonderfully versatile, it is one of those varieties that can become much more than a garnish.

Grow it. Cut it fresh. Enjoy the crunch.
