Spicy · Fresh · Lively
Mustard White microgreens are fresh and vibrant with a distinctive mustard kick. Their tender green leaves may look delicate, but they bring plenty of flavour, making them an easy way to add freshness and gentle heat to everyday meals.
Bright and versatile, they work especially well as a finishing green when a dish needs a little extra character.
Flavour
Peppery · Mustardy · Slightly spicy
Mustard White has a recognisable mustard flavour with a fresh, warming finish. Its flavour is more pronounced than mild microgreens such as broccoli or kale, making a small handful enough to transform a simple dish.
Growing Level
Easy
Mustard White is a relatively quick and beginner-friendly microgreen that grows well with consistent moisture, good airflow and adequate light.
Growing Time
Approximately 7–10 days
Growing conditions such as temperature, light, airflow and watering can influence development. Use the appearance and tenderness of your microgreens as your main guide when deciding when to harvest.
Soaking
No soaking required.
Mustard White seeds can be sown directly onto a thoroughly moistened growing mat.
Germination
After sowing, keep the seeds covered and in darkness during the initial germination period.
Once germination is well established and the young shoots begin to develop, uncover the tray and move it into light.
Watering
Keep the growing mat consistently moist without allowing it to become waterlogged.
Once the roots are established, bottom watering is preferable. Add water to the reservoir tray below and allow the growing mat to absorb moisture from underneath.
Good airflow and balanced moisture help support healthy, even growth.
Light
Once uncovered, place your Mustard White microgreens in a bright location with good indirect natural light or beneath a suitable grow light.
Adequate light encourages compact growth and fresh green leaves.
When to Harvest
Mustard White microgreens are generally ready when the stems are well developed and the cotyledons are fully open and green.
Harvest just above the growing mat using clean scissors or a clean, sharp blade.
Best With
Eggs · Avocado · Salads · Sandwiches · Bowls · Meat · Fish · Asian-inspired dishes
Their mustard heat works especially well as a fresh contrast to rich, creamy or mild ingredients.
Storage
For the best quality, harvest only what you need whenever possible.
If storing harvested microgreens, make sure they are dry before placing them in a clean container in the refrigerator. Excess moisture can shorten their freshness.
Wash before eating and enjoy while fresh.
Good to Know
Mustard White belongs to the Brassica family.
Its characteristic peppery heat is naturally present in the young plant, and the intensity of the flavour can vary depending on growing conditions and harvest stage.
