Mung Bean
Everything you need to know about growing, harvesting and enjoying Mung Bean sprouts at home.

Crisp · Fresh · Mild
Mung Bean sprouts are crisp, juicy and wonderfully fresh, with the familiar crunch found in many Asian-inspired dishes. They produce substantially thicker shoots than small-seeded varieties such as alfalfa or broccoli, making them feel more like an ingredient than a delicate finishing green.
Fast growing and satisfying to grow at home, Mung Beans are an excellent introduction to sprouting and one of the most versatile fresh sprouts for everyday cooking.
Flavour
Mild · Fresh · Slightly sweet
Mung Bean sprouts have a clean, subtle flavour with a gentle natural sweetness. Their appeal comes just as much from their crisp, juicy texture as from their mild taste.
Growing Level
Easy
Mung Beans are relatively easy to sprout and germinate quickly when provided with regular rinsing, good drainage and suitable conditions.
Because the beans expand considerably during sprouting, avoid overcrowding the jar.
Growing Time
Approximately 3–5 days
Growth can vary depending on temperature and other growing conditions. Harvest according to the development and freshness of the sprouts rather than relying only on a fixed number of days.
Soaking
Soaking recommended — approximately 8–12 hours.
Place the beans in your clean sprouting jar, cover generously with clean water and allow them to soak.
After soaking, drain thoroughly before beginning the regular rinse-and-drain cycle.
Germination
After soaking, the beans begin to swell and small roots gradually emerge.
Keep the jar out of strong direct sunlight while the sprouts develop. Good drainage and airflow are particularly important — water should never be left standing in the jar between rinses.
Rinsing
Rinse thoroughly 2–3 times daily.
Fill the jar with clean water, gently move the sprouts around, then drain completely.
Regular rinsing provides moisture while thorough drainage helps maintain a fresh growing environment.
Light
Mung Bean sprouts do not require strong light during the main sprouting period.
Keeping them away from strong direct sunlight helps produce the pale, tender sprouts traditionally associated with Mung Beans. Exposure to light later in development can encourage greener growth.
When to Harvest
Harvest when the sprouts are crisp, fresh and have reached the size and texture you prefer, generally after several days of growth.
Give them a final thorough rinse and drain well before use.
Best With
Stir-fries · Noodles · Rice dishes · Salads · Bowls · Soups · Sandwiches · Asian-inspired dishes
Their crisp texture makes Mung Bean sprouts particularly useful when a dish needs freshness and crunch.
Storage
After the final rinse, allow the sprouts to drain and dry thoroughly before refrigeration.
Store in a clean container in the refrigerator and enjoy while fresh. Excess moisture can shorten their freshness.
Rinse thoroughly before eating.
Good to Know
Mung Beans expand significantly as they germinate, so the starting quantity may look surprisingly small compared with the finished volume of sprouts.
Leaving enough room in the jar is important for airflow, rinsing and even development — which is exactly why your Seed Density Calculator is particularly useful for this variety.
Why Grow Mung Bean?
Mung Bean is one of the most satisfying sprouts to grow because the transformation happens quickly. A small amount of dry beans becomes a jar filled with fresh, crisp shoots in only a few days.
Their mild flavour and substantial crunch also make them one of those home-grown foods that can easily become part of everyday meals.
Soak it. Sprout it fresh. Add the crunch.
