Mizuna Green
Everything you need to know about growing, harvesting and enjoying Mizuna Green microgreens at home.

Mild · Fresh · Gently Peppery
Mizuna Green microgreens are tender and fresh with a delicate flavour and a subtle peppery finish. Their light green leaves bring freshness without the stronger heat of radish or mustard, making them wonderfully versatile for everyday meals.
Elegant and easy to pair, Mizuna is especially lovely when you want just a little character without overpowering the rest of the dish.
Flavour
Mild · Fresh · Gently peppery
Mizuna Green has a clean, slightly mustard-like flavour with a gentle peppery note. It sits beautifully between very mild microgreens and stronger, spicier varieties.
Growing Level
Easy
Mizuna Green is a beginner-friendly microgreen that grows reliably with consistent moisture, good airflow and adequate light.
Growing Time
Approximately 8–12 days
Growing conditions such as temperature, light, airflow and watering can influence development. Use the appearance and tenderness of your microgreens as your main guide when deciding when to harvest.
Soaking
No soaking required.
Mizuna seeds can be sown directly onto a thoroughly moistened growing mat.
Germination
After sowing, keep the seeds covered and in darkness during the initial germination period.
Once the seeds have germinated and the young shoots are established, uncover the tray and move it into light.
Watering
Keep the growing mat consistently moist without allowing it to become waterlogged.
Once the roots are established, bottom watering is preferable. Add water to the reservoir tray below and allow the growing mat to absorb moisture from underneath.
Good airflow and balanced moisture help encourage healthy, even growth.
Light
Once uncovered, place your Mizuna Green microgreens in a bright location with good indirect natural light or beneath a suitable grow light.
Adequate light encourages compact growth and helps the young leaves develop their fresh green colour.
When to Harvest
Mizuna Green microgreens are generally ready when the stems are well developed and the cotyledons are fully open and green.
Harvest just above the growing mat using clean scissors or a clean, sharp blade.
Best With
Eggs · Salads · Sandwiches · Wraps · Bowls · Avocado · Fish · Asian-inspired dishes
Its gentle peppery character makes Mizuna particularly versatile as a fresh finishing green.
Storage
For the best quality, harvest only what you need whenever possible.
If storing harvested microgreens, make sure they are dry before placing them in a clean container in the refrigerator. Excess moisture can shorten their freshness.
Wash before eating and enjoy while fresh.
Good to Know
Mizuna belongs to the Brassica family and is sometimes known as Japanese mustard greens.
Despite the name, its flavour is generally gentler than stronger mustard varieties, making it a lovely choice when you want subtle pepperiness rather than pronounced heat.
