Kale

Everything you need to know about growing, harvesting and enjoying Kale microgreens at home.

Mild · Fresh · Delicate

Kale microgreens are tender, fresh and pleasantly mild, with a delicate green flavour that makes them easy to enjoy every day. Their beautiful young leaves add freshness and colour without overpowering the rest of the dish.

Versatile and approachable, Kale is a lovely choice for everything from breakfast plates and salads to bowls, sandwiches and smoothies.

Flavour

Mild · Fresh · Slightly earthy

Kale microgreens have a gentle green flavour with subtle earthy notes. They are considerably more delicate than mature kale and pair easily with both savoury dishes and fresh ingredients.

Growing Level

Easy

Kale is a beginner-friendly microgreen that grows reliably when provided with consistent moisture, light and good airflow.

Growing Time

Approximately 8–12 days

Growing conditions such as temperature, light, airflow and watering can influence development. Use the appearance of your microgreens as your main guide when deciding when to harvest.

Soaking

No soaking required.

Kale seeds can be sown directly onto a thoroughly moistened growing mat.

Germination

After sowing, keep the seeds covered and in darkness during the initial germination period.

Once the seeds have germinated and the young shoots are established, uncover the tray and move it into light.

Watering

Keep the growing mat consistently moist without allowing it to become waterlogged.

Once the roots are established, bottom watering is preferable. Add water to the reservoir tray below and allow the growing mat to absorb moisture from underneath.

Good airflow and balanced moisture help support healthy growth.

Light

Once uncovered, place your Kale microgreens in a bright location with good indirect natural light or beneath a suitable grow light.

Adequate light encourages strong, compact growth and helps the leaves develop their fresh green colour.

When to Harvest

Kale microgreens are generally ready when the stems are well developed and the cotyledons are fully open and green.

Harvest just above the growing mat using clean scissors or a clean, sharp blade.

Best With

Eggs · Salads · Sandwiches · Wraps · Bowls · Smoothies · Soups · Avocado

Their mild flavour makes Kale microgreens particularly versatile. Add them fresh after cooking whenever possible to preserve their delicate texture.

Storage

For the best quality, harvest only what you need whenever possible.

If storing harvested microgreens, make sure they are dry before placing them in a clean container in the refrigerator. Excess moisture can shorten their freshness.

Wash before eating and enjoy while fresh.

Good to Know

Kale belongs to the Brassica family, alongside broccoli, cabbage and radish.

During germination, you may notice fine white root hairs around the roots. These are a normal part of healthy root development and can sometimes be mistaken for mould.

Why Grow Kale?

Kale is one of those wonderfully versatile microgreens that can become part of your everyday routine. Mild enough to pair with almost anything, yet fresh enough to bring colour and life to a simple meal.

Grow it. Cut it fresh. Make it part of everyday life.
