Alfalfa

Everything you need to know about growing, harvesting and enjoying Alfalfa microgreens at home.

Mild · Fresh · Delicate

Alfalfa microgreens are light, tender and beautifully mild, with a clean green flavour that slips easily into everyday meals. Their delicate character makes them particularly lovely when you want to add freshness without changing the overall flavour of a dish.

Soft in taste and versatile in the kitchen, Alfalfa is an easy addition to breakfast plates, sandwiches, salads, wraps and bowls.

Flavour

Mild · Fresh · Slightly grassy

Alfalfa has a gentle, clean flavour with subtle grassy notes. It is one of the milder microgreens, making it especially easy to pair with a wide variety of foods.

Growing Level

Moderate

Alfalfa seeds are small and benefit from even sowing, careful moisture management and good airflow throughout the growing process.

Growing Time

Approximately 8–12 days

Growing conditions such as temperature, light, airflow and watering can influence development. Use the appearance and growth of your microgreens as your main guide when deciding when to harvest.

Soaking

No soaking required for microgreens.

Alfalfa seeds can be sown directly onto a thoroughly moistened growing mat.

Germination

After sowing, keep the seeds covered and in darkness during the initial germination period.

Maintain consistent moisture without oversaturating the growing mat. Once the young shoots are established, uncover the tray and move it into light.

Watering

Keep the growing mat evenly moist but never waterlogged.

Once the roots are established, bottom watering is preferable. Add water to the reservoir tray below and allow the growing mat to absorb moisture from underneath.

Because Alfalfa seeds are small, careful watering and good airflow are particularly important.

Light

Once uncovered, place your Alfalfa microgreens in a bright location with good indirect natural light or beneath a suitable grow light.

Adequate light helps encourage healthy growth and fresh green leaves.

When to Harvest

Alfalfa microgreens are generally ready when the stems have developed well and the cotyledons are fully open and green.

Harvest just above the growing mat using clean scissors or a clean, sharp blade.

Best With

Eggs · Avocado · Salads · Sandwiches · Wraps · Bowls · Smoothies

Their delicate flavour makes Alfalfa especially useful when you want freshness and texture without a strong peppery or spicy note.

Storage

For the best quality, harvest only what you need whenever possible.

If storing harvested microgreens, make sure they are dry before placing them in a clean container in the refrigerator. Excess moisture can shorten their freshness.

Wash before eating and enjoy while fresh.

Good to Know

Alfalfa can be grown both as microgreens and as sprouts, but the growing methods are different.

When grown as microgreens, the seeds are sown onto a growing medium and harvested above the mat. When sprouted, the entire young plant develops without a growing medium and requires a different growing and hygiene process.

Why Grow Alfalfa?

Alfalfa is a lovely choice for anyone who prefers softer, more delicate flavours. Fresh and versatile, it can become an effortless part of everyday meals without overpowering the ingredients around it.

Grow it. Cut it fresh. Keep it simple.
