Adzuki Bean

Everything you need to know about growing, harvesting and enjoying Adzuki Bean sprouts at home.

Nutty · Fresh · Crisp

Adzuki Bean sprouts have a fresh, slightly nutty character with a gentle natural sweetness. Their shoots are more substantial than delicate sprouts such as alfalfa, giving them a satisfying texture and making them easy to incorporate into everyday meals.

Although less familiar than Mung Bean sprouts, Adzuki Beans are a lovely variety to grow at home when you want something a little different while keeping the process simple.

Flavour

Nutty · Mild · Slightly sweet

Adzuki Bean sprouts have a mild bean-like flavour with subtle nutty and sweet notes. Their flavour becomes more pronounced as they develop.

Growing Level

Easy

Adzuki Beans sprout readily when properly soaked and given regular rinsing, thorough drainage and good airflow.

Because the beans expand considerably during germination, avoid overcrowding the sprouting jar.

Growing Time

Approximately 3–5 days

Temperature and other growing conditions can influence development. Use the appearance, freshness and texture of the sprouts as your main guide rather than relying only on a fixed number of days.

Soaking

Soaking recommended — approximately 8–12 hours.

Place the beans in a clean sprouting jar and cover generously with clean water.

After soaking, drain thoroughly before beginning the regular rinse-and-drain cycle.

Germination

After soaking, the beans begin to swell and small roots gradually emerge.

Keep the jar away from strong direct sunlight while the sprouts develop. Good airflow and thorough drainage are important throughout the growing process.

Rinsing

Rinse thoroughly 2–3 times daily.

Fill the jar with clean water, gently move the sprouts around and drain completely.

Do not allow water to remain standing in the jar between rinses.

Light

Adzuki Bean sprouts do not require strong light during the main sprouting period.

Keep the jar away from strong direct sunlight. If allowed to grow longer and exposed to light, the developing shoots may begin to become greener.

When to Harvest

Harvest when the roots have developed and the sprouts are fresh and crisp, generally after several days of growth.

Give them a final thorough rinse and drain well before use.

Best With

Salads · Bowls · Rice dishes · Noodles · Soups · Vegetables · Stir-fries · Asian-inspired dishes

Their mild, slightly nutty flavour works particularly well with savoury dishes where you want fresh texture without a strong peppery taste.

Storage

After the final rinse, allow the sprouts to drain and dry thoroughly before refrigeration.

Store in a clean container in the refrigerator and enjoy while fresh. Excess moisture can shorten their freshness.

Rinse thoroughly before eating.

Good to Know

Adzuki Beans are legumes and develop differently from small-seeded sprouts such as alfalfa or broccoli.

They increase considerably in volume as they germinate, so leaving enough room in the jar is important for rinsing, drainage and airflow. Use the Seed Density Calculator to determine the appropriate starting quantity for your jar.

Why Grow Adzuki Bean?

Adzuki Bean is a lovely alternative to the more familiar Mung Bean. It offers a slightly different flavour and texture while still giving you the satisfying transformation of a dry bean into fresh sprouts within only a few days.

It is also a beautiful example of what GW Grow is really about — taking something very small and turning it into fresh food at home.

Soak it. Sprout it fresh. Enjoy something different.
